I think that would be neat but do you think its even remotely possible
with the amount of memory given to work with?

I was just wondering if there was anyone else out there who had wanted
to work on porting Linux to the 89 or 92.
I looked into it before.  There are such projects for the 68000 in
progress, and which are successful.  We have a one up on them with Flash
memory and an added on floating point capability, plus we know enough
about our hardware to write video and keyboard drivers.
I was waiting to see what kind of C (or c++) compilers, as well as ROM
info turned up for the TI.
