Correction on that.
The two chips are low byte and high byte on the bus. The 68k has 16 bit 
bus, so you need two 8 bit memory chips. all even byte accesses go to 
one chip, all odd to the other.
So the easiest would be to change both chips.
I'm not saying this would be easy, but it certainly is possible to do.
