If I'd need many I/O ports for some project, I'd use PCF8574 chips
directly, or if I had to drive relays or other high current loads, I'd add
transistors or other buffers after the PCF8574's. But there are very few
projects in which you need many I/O ports. If you really need many, you can
probably just as well design your own addressing system using the
PCF8574's. This could be optimized to whatever purpose it would be used
for, and would only contain the parts that are needed to save cost and
space. I don't think a "one-design-for-everything" like the UBEC would be
very smart, unless there's a lot of use for it, which there isn't. Feel
free to build one, though.
