I think it's this:

z(x,y) = sinc(sqrt(x^2 + y^2))

If you don't know what a sinc function is,

sinc(x) = sin(a*x)/(a*x), x != 0
sinc(0) = 1

I've seen both a = 1 and a = pi.  If this isn't the function in the
pictures, it sure looks a lot like it.
