By far the best teaching docs that I've seen are at Jimmy Mardell's page:

It's for the TI-85, but almost everything's the same (except direct access to the screen).

But a book that is a *must* for anyone who wants to seriously program the Z80 is "Programming the Z80," by Rodney Zaks -- you can get it at Amazon.com -- it's probably not in your local bookstore.
