I'm believe that even a PC mouse contains "quadrature" signals (line A and
line B is out of phase by 90°)...

they look something like this:           

     (G)     here the mouse changes direction

if you then connect line A to a bidirectional counters clock input (triggering
on changes)
and connect line B to the direction input it will count up if you move the
mouse
in one direction and down in the other direction...  (there are naturally two
line for up/down and two for left/right)
(in PC mice this data is transformed into serial data)
