Unfortunately, there really aren't any.  You can get the Zilog manuals, or
try to find a copy of Rodney Zaks' book, but since all Z80 books are out of
print, good luck.  Best thing to do, imho, is to grab all the files from
http://www.ticalc.org/pub/text/z80/ and the Assembly Studio 86 help file.
The easiest way to learn the instruction set (if z80 is your first assembly
language) is to just write programs.  You'll naturally use the simple
instructions first, but as you gain more experience you'll start using the
more "compicated" instructions.  The help file has the commands organized by
type, so you look to see what all of them are for a certain type of
operation.
