"handshaking" is the process of acknowledging that something has been
sent.  In the case of the TI, this means that after every bit send,
the receiving device sends an acknowledgement signal (the "handshake")
saying that it received the bit okay.  The exact details of the
handshaking are a bit difficult to understand but that's the general
idea.
