  I found it.  The "Guide to Macintosh Family Hardware".  It tells all 
sorts of wonderful stuff about the internals of the serial manager 
hardware, it gives me a pinout, and it says NOTHING about the protocol 
except for "RS-232".  Thanks though.

  That's what I'll probably have to do... A shame, but better than 
spending the next 5 years looking.
