You can't just swap out chips like that and except it to work.  You'd more
than likely have to redo the entire design of the board.  Buy a Game Boy.
If you _really_ want to design your own hardware, you can pretty much put
whatever you want on a cart, and just plug it in (hehe, after a lot of EE
classes...).  Or using the standard Memory Bank Controller 5 (the only one
guaranteed to work on the GBC in double speed mode)  you can fit 8mb of ROM
and 128kb of RAM on a cart.  Besides the fact you can do a whole lot more
cool stuff on it...
